BLOOMS: Healthy deliciousness beyond sustainability

Don’t be surprised if the sous-chef picks fresh coriander from the vegetable garden you are sitting in while enjoying an alfresco lunch at BLOOMS, the brand new (opening June 2023) vegetarian, vegan, organic, regional and seasonal restaurant in the garden of The Dolder Grand in Zurich.

In an effortlessly open kitchen, outside in the vegetable garden, you can enjoy dinner and lunch, and later in the autumn lunch only when the weather permits, in a beautiful setting that lets you smell the seasonal herbs and vegetables that culinary director and chef de fine dining Heiko Nieder uses for his simple and pure, yet highly defined vegetarian menu.

“We source ingredients and ideas from our kitchen garden – an array of vibrant colours, flavours and tactile sensations. Many of the delights on the plate come straight from our own garden. Otherwise, we source top-quality products from local producers,” says Nieder.

The idea of enjoying healthy and delicious food in a relaxing environment could not be more appropriate than in a vegetable garden.

Enjoying a lunch on a golden autumn day, surrounded by the orange trees, the weather and nature all contribute to this fine experience of savouring a moment and appreciating the local ingredients.

A concept that embraces all aspects of sustainability, something we hope to see more of in the future.
